I have patches for PC-DOS versions 2.0 to 3.1 which will change the colours
for foreground and background.  These would take a while to look up and post
but if the response is great enough for something like this i will post
them later on this week.  Send me e-mail to notify me that you need these
patches.  A lot of the patches out there change the colour till you do a 
CLS and then it reverts back again.  I think this even happens with the
NORTAN Utilities.
