Thanks to the many folks who recommended the book *Chinese Meatlesss Cooking*
by Stella Lau Fessler.  The Stanford Bookstore finally got some copies 
in stock and I now have one.  For others interested in this book, it's 
published in paperback by Signet and sells for $3.50.
