The MAC+ manual, at least, has a table that lists all of the mentioned shortcuts. I agree that this kind of cleverness can get out of hand quickly. Most of the shortcuts, at least, do things most people can live without. The only notable exception is cmd-opt-double click on finder, which ought to be in a menu.
