The Kraft QuickStick has two settings... one where it moves just like a
mouse, and the other where, once you release the stick, it returns to
center.  I got it specifically for the Flight Simulator, also.  It is a
little kludgey to switch between the two, and annoyingly, it seems that if
you pull it too far out, you alter the center position; but it's about the
best thing out there at the moment.
