It think it's for the same reason we pronounce BLT as "blit" and not "bilt": SC, like BL, is a natural combination of consonants that one doesn't tend to break up with vowels. Therefore, "scuzzy" (or "scizzy") appears in my mind to be the "right" pronunciation (emphasis on the quotation marks). Put me down for "scuzzy", because a schwa seems like the right vowel to use.
