i like the 77 r100 and the 74-76 r90s models. i've owned a number of
these things (currently a 78 rs and a 69 i've had forever). some of the r75's 
has differnt length wheelbases - (usually referred to as short or long) and 
i've heard the short has some strange handling traits. i owned one once
and never noticed them, but they probably do happen. i found very little 
difference between the r75's and r90's wrt smoothness, when tuned right,
they all run well.
a good choice would be a 77 rs. it offers full faring and is very reliable.
i'm partial to the rs model since i like that faring when it rains. my
next choice would be the r90s. 
a good source for used bmw's is the bmw owners news - if you don't have
access to them the next best place is the paper or your local shops
bulletin board. good shops will have a board where people can post the
things they want to trade/sell/etc.
this weekend in monterey is the national bmw rally - this is a good place
to ask people questions/etc. it's at laguna seca thru august 3rd.
