It should have been "American Wholefoods Cuisine" (not Cookery); it's by Nikki & David Goldbeck, published by New American Library, 1983 (ISBN for the hardcover is 0-453-00434-2). I should also have mentioned Julie Jordan's "Wings of Life" (The Crossing Press, 1976, ISBN 0-912278-82-X and 0-912278-77-3), a bit of an underground classic among vegetarians. And I guess I shouldn't have omitted Anna Thomas's "The Vegetarian Epicure", Parts 1 and 2, which have also been consistently good sellers.
