Just got the chance to download Matt's bezier cubic surface program. 
I'm impressed! That program is fast, and, what I think is a big win as
far as user interfacing goes, it lets you change and view the surface
in real time! You simply set the granularity to a low value (which still
gives you a decent looking surface), play with the surface to your
heart's content (by moving the control points), and then, to view to
surface in more detail, increase the granularity. And even with increased
granularity the thing is still pretty fast.
