I will answer that with Concertware+. Now, if you really want to know what I like best, it is Studio Session by MacNifty. The instruments are digitized so you get the best sound out of any music program I know of for the mac. Also, you are allowed 6 (that's right, not just 4) voices with promises of a new release which will support 8 voices. The way they could do this was simple, they just rewrote the sound driver for the Mac.
