We built one big Ethernet to replace several smaller ones. It was extremely convenient to be able to change which physical Ethernet a system was connected to asynchronously from changing what IP address that host was using. In fact, if I recall correctly, some hosts began using their new IP address before discontinuing use of their old IP address, as another way of maintaining uninterrupted service during the cutover.
