One very good book for learning Apple's is 

	APPLE II USER'S GUIDE
	by Lon Poole
	   Martin McNiff
	   Steven Cook
	Osborne/McGraw-Hill
	ISBN 0-88134-104-5

Mine is the second edition, but I believe there is a third edition out now
that includes PRODOS as well as DOS 3.3.  I still pull this book out
occationally.
