I haven't stared at Amiga screens for long and have no idea what causes the problem you have with them, but it is not interlacing per se. Your home television screen is interlaced. (So are the terminals I use all day long at work.) I would think that the ridiculously low vertical resolution would cause far more of a visual problem.
