AppleTalk is pretty well documented in a work called "Inside Appletalk" available from APDA (APDA #KNSIAT). AFP (the filing protocol used by AppleShare) is documented in APDA #KNBAFP. AFP at least is proprietary (says so on the first page of the documentation). I don't know anything about developing AppleTalk/AppleShare for another computer, if that is what you are looking for, but I would check around before jumping into that water - there are already AppleTalks for many machines, and ways to hook into still others.
