Well, here is a list of color games that I got.
So far I only got just one respond

Mac Golf 3.0                      16
Tetris                           256 colors max
Solitaire Royal                  256 colors max
Sargon 4                         256 colors max

I also got this shareware game that is also in color
Seaheaven                        256 (? I'm not sure)(sort of a solitaire game)

more addition:

				   need 2M and a HD (3 x 800K disk)
NetTrek				to be announced later
Maze Survival			16 colors
Lounge Suit Larry		16 colors
Colour Billiards		256 colors
