The first is a book from Addison/Wesley titled "Designing Cards and Drivers for Macintosh II and Macintosh SE." The second is through the IEEE. Ask for the IEEE Standard 1196 (The IEEE NuBus standard), which they'll send to you for around $35. Neither of these includes information about the NeXT machine's NuBus, though. For that, you'll have to write to NeXT, as they should have a technical document out about now on their machine.
