I found this easiest by getting the "save to turn off your mac" dialog, positioning the mouse, inserting the floppy, holding the keys, and hitting the mouse with my elbow. Alternate: after booting off the floppy in the normal fashion, drop the hard disk icon(s) in the trash. They will be inaccessible (by normal means) until you next reboot (I think that there are DAs or cdevs that can remount them, actually).
