Karl, The 65C802 fully duplicates the functionality of the 65C02 at powerup, so you would lose nothing by getting the 802. To get a fully "enhanced" //e, you also need the firware ROMs that display Apple //e at powerup (as well as several other improvements) and the MouseText ROMs to change your display. While you can do without the MouseText (little boxes, check marks and apple symbols for the text screen) you MUST have the firmware ROMs because most "enhanced" software reads ROM memory and checks to see if they are there. i.e. even if you have a C02 or better, most programs will erroneously assume that the ROM version indicates whether or not you are enhanced.
