If you want to copy all the contents of one disk to another but don't want to copy a certian file/folder, you move that file to the desktop. Makes perfect sence to me. Otherwize you would copy the whole disk and then have to throw away the file/folder (like the system) that you don't want on the newly copied disk. That would be a waste of time.
