Because we live in a world where the marjority of systems are binary distributions which support only the 'g' protocol or perhaps one of two mutually incompatible streaming protocols. Worse, bugs in the common implementation of the 'g' protocol and system "raw" buffer size limits tend to prevent excercising the options for larger packet sizes that could improve 'g' thruput.
