Seems to me that a server would tend to develop more fragmentation than a normal user's hard disk, particularly if something like a database is being accessed and augmented regularly. And because a network is only as fast as its slowest component, it's reasonable to think that you want your server disk to be operating as efficiently and quickly as possible.
