    It takes over a minute for the menu to appear.

Try disabling backing-store and save-unders on your server, by adding
	-su -bs
as command line options to the server (in your Xservers file for xdm).

Not really.  The X(1) man page lists some trivial things.  You pretty much have
to look at the documentation for each application, and then you may also have
to look at the documentation for the toolkit used to build the application, in
order to know what resources are available.
