John, assuming things haven't moved too much, you should be able to
create a file in your "$HOME/.elm" directory called "elmheaders" which
can contain whatever fields you'd like to have included in your outbound
mail.  For example, mine is:

  % cat ~/.elm/elmheaders
  Reply-To: Dave Taylor <taylor@limbo.intuitive.com>
  Organization: Intuitive Systems, Mountain View, California  +1 (415) 966-1151
  
Neat, eh?  If you'd like to do it while within the program, you should
look at the O)ptions screen and see if it's available there...
