The best knife for one-hand use has never made it into any aids catalogs that I am aware of. This is the Alaskan Ulu. It was originally designed by Eskimos for use in skinning seals, etc. Shapes like a wide slice of pizza, the curves edge is the cutting surface and the handle is on the point of the wedge.
