I would greatly appreciate and recommendations/suggestions for a
Smalltalk environment for use on a Macintosh IIci.

The only one I can find is Digitalk Smalltalk/V advertised
in MacWorld.

I particularly want to use Smalltalk to write some event driven
simulations - so I would be interested to know what methods for
statistical and queueing come with any version of Smalltalk.
