Intel offers a collection of library routines and documentation about EMS free of charge from its PCEO division. This include all the EMS handling you'd probably ever want to do, with both C and assembley code provided. The documentation includes both information about the routines, and a full description of the EMS specification and "proper" programming procedures for using EMS.
